Pandesal Recipe
Ingredients
4 Tbsp melted butter
2 eggs at room temp
1 and 1/2 cup of milk (warm to 110-115F)
1 package of ACTIVE DRY yeast
2 and 1/4 cups all-purpose flour
2 cups bread flour
½ cup sugar
1 and 1/2 tsp salt
½ cup fine breadcrumbs
Instructions
Warm milk to 110-115F then stir & mix with sugar and yeast.
Set aside for 10 mins.
Mix melted butter, beaten eggs and milk with yeast mixture.
Mix the all-purpose flour, bread flour, sugar and salt in a bowl.
Make a well in the middle and add the liquid ingredients.
Mix well starting in the middle and going outwards until dough forms a ball.
Knead the dough for 10 mins.
Form the ball of dough in a lightly oiled bowl and cover it with cling wrap.
Let the dough rise at RT for 1 hour 30 mins to 2 hours. The dough should be doubled in size.
Divide the dough into 3 big portions. Each portion will be divided into 6 smaller portions to make 18 pandesals.
Shape them to round dough balls and roll to cover with bread crumbs.
On a baking sheet with parchment paper, arrange the dough balls 1-inch apart. 6 per row will fit a baking pan perfectly.
Cover with a flour sack and allow to proof for 1hour.
Bake in a 350 F oven for about 25-30 minutes or until golden brown. Serve hot.
